Oatmeal whoppie cookies.



These made a great hit at the family dinner this Sunday. I had a blast making them and they are really healthy.
Here's the recipes....

Original Recipe Yield 3 dozen

Ingredients

  • 2 cups packed brown sugar
  • 3/4 cup butter
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 3 tablespoons boiling water
  • 1 teaspoon baking soda
  • 2 1/2 cups all-purpose flour
  • 2 cups quick cooking oats
  • 1 egg white
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 cups confectioners' sugar
  • 3/4 cup shortening

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
  2. Cream butter or margarine with the brown sugar until light and fluffy. Beat in the eggs and mix well. Stir in the salt, cinnamon, baking powder, boiling water, baking soda and flour. Mix to combine. Stir in the oats.
  3. Drop cookies onto the prepared baking sheets. Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes. Let cookies cool then make sandwiches from two cookies filled with Whoopie Pie Filling.
  4. To Make Filling: Beat egg white. Mix in the milk, 1 teaspoon vanilla and 1 cup confectioners' sugar. Beat in the shortening and remaining 1 cup confectioners' sugar. Beat until light.

Bowling

It's interesting how much you can love something. Well this year has been an interesting year with bowling. In the beginning i was only supposed to coach for a couple of games until I had ryker. Then my replacement coach wasn't able to coach because he's to young, so I had to come back and coach my team. Well my team had only 5 players when I came back because the ones that wanted the other coach didn't want to play with me being their coach. Oh rude let me tell you. Anyways back to my story. We're down to the very end and doing a tournament and my team let a lone has been at the very top of the boys teams. We bowl today against our other boys team for uintah, who we beat yesterday. Wish us luck hopefully we can win again. yeepee.

Awww sleep...

Ryker slept all night last night. It was so nice not having to get up every three hours. But, now he has slept all day and I'm worried I wont get enough sleep. At least it was nice for a day that he slept all night that one time.

Ryker 3 months old.


I caught Ryker sleeping in the changing table with his leg through some of the rails. I was laughing so hard when I saw him.

I loved these pictures especially the ones where he's smiling. Doesn't he look so cute with his gummy smile. Haha I sure love this little boy of mine.

A day with ashley....

Today was one of my best days. I took ashley to a group thing called a wiggles and giggles. She had so much fun. At first she was sortof scared but after a while she started to have fun. We danced and singed different songs. One of my favorites was Teddy Bear, Teddy Bear. I remember when I was a little girl and I used to sing this song when we would jump rope. It was so much fun. Then we went to coffee talk with some of our mom group friends. Even though I don't drink coffee it was fun to sit and chat with everyone. I love days like this. Now we're relaxing in "her" living room watching her favorite show. SPONGEBOB SQUAREPANTS Yeppe

I'm bad at blogging....

So, I know that I'm bad at blogging but I just really haven't had much to really say. The family is doing great. Ryker weighes over 11 lbs now and ashley is getting a bigger vocab then she used to have. Steve has been the sweetest husband in the world. I feel bad but i complained about my bedroom not getting finished so now he has made it his top job to work on it so he's working on it every minute he gets. WooHoo. So other then that nothing is new. I'll get back to letting everyone know whats going on in our lovely lives.
